So I come home and the fridge is empty, a half-used pack of pita bread remains in my fridge. I pray to God I have some of the Mexican cheese left and HOORAY, yes there is. Now I can make myself a tasty PITZA in no time.
Turn on the oven and pre-heat to about 475 Deg F [about 250 Deg Celsius]. Take a single pita bread and spread a thin layer of tomato paste on it. You can substitute the pita bread with any flat bread, I have tried this with tortilla bread and Indian Nan and it works great.
Sprinkle a pinch of oregano, basil and salt on the paste. I like crushing the oregano in my fingers as I spread it all over. Cover with the Mexican cheese or any other cheese than browns and melts well like Mozzarella or Cheddar. If you have some Feta cheese, it adds a lot of flavor to the PITZA; do go easy on the Feta.
I happen to have some onions, green peppers, Jalapenos and Roma tomatoes left in the house. Chop up and spread on the cheese. Sprinkle with a little more cheese that acts as a glue to hold everything together.
Stick on a rack or place directly on the oven rack. Monitor WITHOUT opening and closing the oven door [we want to keep the heat in the oven as much as possible]. Once the edge of the PITZA is brown and the cheese is starting to go brown it is time to pull it out.
This recipe takes a total of 10-15 minutes to from start to finish and is a great healthy treat for any time of the day. Enjoy :-)
