Check out this recipe for Trenton Tomato Pies. This classic style pizza has been a staple on the Jersey Shore long before Snooki was ever thought of. Dating back to 1910, this style of pizza is a simple yet flavorful recipe.
Ingredients:
3-3/4 c of white flour
1-1/2 teaspoons of salt
1-1/2 c warm water
1/4 teaspoon active yeast
16 oz whole peeled canned tomatoes (or homemade peeled tomatoes)
2-1/4 c mozzarella cheese
Directions:
In large bowl whisk flour, yeast, and salt together. Slowly stir in water until dough forms. Cover in plastic and allow to rest for 18 hours. Don't worry if bubbles appear, that is good. Once it has doubled in size remove to a well floured surface and split into two. Fold each dough over and cover with a wet towel for at least thirty minutes. Place tomatoes in a blender and purée into a thick sauce. You can add basil or oregano if you would like, however the traditional recipes don't call for it. Once dough is ready you can flatten into a pizza crust top with your cheese and spoon on sauce then bake in a pre-heated oven until dough is golden brown.
