Oatmeal Cream pizza does not really need any introduction... it's just good.
Dough:
1 cup of butter
1 cup of sugar (raw)
2 eggs
2 cups of all purpose flower
1 teaspoon of baking soda
1 teaspoon of salt
3 cups of instant oats
1 cup of brown sugar
1 teaspoon vanilla
dash of cinnamon
Cream:
1 c shorting
8 oz marshmallow fluff
1 1/2 cup of powdered sugar
dash of salt
Pre-heat oven to 350ºF
In a large mixing bowl add all liquids and stir together on low. Slowly add dry ingredients starting with flour, then sugar, baking soda, salt, cinnamon, and finish with brown sugar.
With wet hands make two separate dough balls that are even in shape and size. On a non-stick pan smush down one dough ball into a round pizza shape. Remember you do not need to mash it all the way down, it will round out on it's own just like any drop cookie. Bake for 18-12 minutes or until done. Allow to cool on a cooling rack. Repeat with the other dough ball.
Mix together all of the ingredients for the cream and set aside. DO NOT REFRIGERATE!!
Once both crusts are cooled, flip one over to the pan side and spread cream mixture over it. Once the cream has been spread, top it with other oatmeal crust pan side down so both surfaces that are meeting lay flat with one another. Slice with a large pizza cutter and serve with some nice cold milk!
