I love pizza and I love desserts even more, why not combine them together? Well this is not a new thing for pie lovers everywhere. Dessert pizza is the hottest trend in portable desserts great for any occasion. I found this wonderful recipe on a gluten free website and tweaked it a little bit. It is to die for!!
You will need one box of Gluten Free Chocolate brownie mix and everything the box requires. Normally this is only an egg but check the box first.
You will also need:
1/3 cup of organic sugar
1 teaspoon of vanilla
2 1/2 cups of sliced or diced Strawberries
1 cup of Blueberries
1 cup of Raspberries
1/3 cup of Apple butter
1/3 cup of crushed walnuts
Pre-heat your oven to 350 degrees F and grease and flour at least a 12 inch pizza pan. I prefer to use a dark none-stick pan but your oven will cook these a little faster so keep checking it if you choose to use this type of pan.
Make your brownie mix in a large bowl as directed. Spread the mixture onto your pizza tray in a large circle leaving room for expansion. Bake as directed on the box. When done, check to be sure with a toothepick. When you insert your toothpick make sure that it comes out clean in the center this will let you know that it's done. Allow the pizza brownie to cool.
In a small mixing bowl combine your cream cheese and vanilla. With an electric mixer beat the cream cheese and vanilla while adding your sugar slowly to the mixture. Once the cream cheese is smooth add in your crushed walnuts and on the lowest setting stir in until evenly distributed.
Spread the cream cheese mixture over the crust of the cooled brownie pie. Take a basting brush and coat the top of the cream cheese mixture with the apple butter very lightly. Next is the fun part! Decorate your pie with your berries. Brush another coat of apple butter on top of your berries. Allow your dessert pizza to sit in the fridge for an hour to two. This will give it time to rest, helping your pie stay in tact. Cut into pizza slices and serve with a nice glass of pink lemonade!!
