People think that the Alfa Wood Burning Oven is only for cooking pizza but if you manage your fire, you can cook other food as well. For roasting Chick, You will need for your oven to be at 450 degrees and will need the following equipment. An oven proof roasting pan with 2 “ sides, a small piece of tin foil and a vertical chicken roaster as shown below. The Method of preparation is as follows:

With your finger, separate the skin from the meat around the breast area so you can insert garlic butter. Then insert your aromatics into the chicken cavity. I use fresh thyme and rosemary. Crush about 5 or 6 cloves of garlic and put in the small bowl that is built into the vertical chicken roaster. The juice from the chicken and some of the butter as it melts will run into the little bowl with the crushed garlic cloves and help to season the chicken from the inside. After seasoning the chicken with salt and pepper and inserting the aromatics, slide the chicken over the vertical chicken roaster. Place it in the roasting pan and if cooking more than one, space them about 2 to 3 inches apart. Use the small piece of foil to form a cap to put on the top of the chicken to keep the top of the bird from getting over done due to the dome heat. Before sliding the pan into the oven, spread your ambers evenly around the perimeter of your oven to allow for more even cooking. After sweeping your oven deck, carefully slide the pan with your chicken into the center of your oven and close with the oven door. In 45 minutes, your chicken should be 165 to 170 degrees in the deepest part of the breast and ready to remove from the oven. Let rest for 10 to 15 minutes. This allows the seasoning to be drawn into the meat as the chicken starts to cool.
