Thanksgiving leaves us with an abundance of left-over food; this year let's not waste anything!
Baked potatoes are fantastic and I think I lived on them when I was on a carb kick a few years ago. When I made this pizza I almost ate the whole thing so make sure you have a little more will power than I do because it is soooooo good!
1 ready to bake pizza crust
1 c of steamed or raw broccoli (this is personal preference, I prefer steamed)
1 lb of cooked bacon chopped or bag of bacon bits
1 tomato diced
2 1/2 c mashed potatoes
1/2 cup of chives
1/4 c of melted butter
1 1/2 c of shredded cheddar cheese
Pre-heat oven to 450ºF
Mix potatoes and butter together then spread on your crust. Top with remaining ingredients in this order: chives, broccoli, cheese, bacon, and lastly tomato.
Bake until cheese is bubbling, about 10 minutes.
