2 medium Leeks, sliced thin
1 1/2 tablespoon of butter (use real butter if possible)
1 tablespoon of fresh parsley minced works best
3/4 cup tomato chopped or 2 whole tomatoes sliced
3 oz. Feta cheese crumbled
2 tablespoons Olive Oil
Melt your butter in a large skillet over medium-low heat. add leeks; Saute until tender, about 10 minutes. Season with salt and pepper then stir in parsley. Allow your mixture to cool to room tempature. Spread leek topping over pizza. This recipe is great over whole wheat pizza crust. Add your tomatoes to the top of you pizza and then sprinkle your Feta cheese. Drizzle 1 tablespoon of oil over the top and it's ready to bake. Oven times will very depending on location (altitude plays a large factor in baking) but 450 degrees F for about 10 min seems to do the trick.
