I love Greek Pizza and all variations of it! Here is a simple vegan Greek pizza that the whole family will enjoy.
Ingredients:
3 tablespoons of Olive Oil
1 1/2 tablespoons of crushed garlic
1 whole wheat pizza dough
1/4 c roasted pine nuts
1 tomato sliced then cut into pie slices
1/2 cup of spinach uncooked
Corn flour
Directions:
Pre-heat oven or stone to highest temperature.
For this recipe I used a Trader Joe's bagged whole wheat pizza dough crust. I allowed it to set for twenty minutes as directed. When pressing out your dough coat it with corn flour and flatten out evenly to create a crust.
Mix olive oil and garlic in a bowl and with your hands rub both sides of the dough while still maintaining the shape.
Bake for 7-8 minutes allowing the crust to partially cook. We are using raw ingredients and only want them to warm up so the dough needs to be almost done prior to adding toppings.
Once crust is 90% cooked you will want to place spinach over pizza then feta cheese and tomatoes.
I took a picture of the pizza prior to putting it in the oven with the ingredients so you can take note of the crust before it goes in. This crust is almost finished and just needs a few more minutes in the oven.
Once you have all the toppings assembled pop it into the oven for another 5 minutes.
After the pie is completely cooked top with pine nuts and serve.
This pizza is amazing cold the next day too... beware of sending any leftovers home with guest!
Mm. Looks delicious! We have a ton of aeppls on our trees this year so we've been having lots of apple pies, apple sauce and apple butter. Have you ever tried xanthan gum or guar gum for keeping the crust from being too crumbly? We add that to our gluten free (which is VER Y crumbly normally) recipes. I want apple pie now . Genevieve
