Straight from the cyber pages of vegetarian food blog Oh My Veggies comes a mouth-watering, tantalizing fresh grilled pizza recipe…Grilled Caprese Naan Pizza. Blogger ‘Kiersten’ recently paid visit to a wonderful naan restaurant in Atlanta and found herself asking why there aren’t more Naan restaurants around? Convinced that naan is the new pita, Kiersten claims that store-bought naan tastes much better than store-bought pita, and is just as flexible in uses as the beloved pita.
Kiersten had used naan as pizza crust before, but this recipe differs in that she starts out by grilling the naan before applying the toppings. This can be done on an outdoor grill, or with a cast-iron grill pan inside. Grill both sides of the naan until warm and nice grill marks can be seen. Top the grilled naan with grape tomatoes, mozzarella and basil and drizzle the whole thing with a balsamic reduction. So simple, yet so delicious!
